Quick Berry Compote

I can guarantee that we have all been at a point where we needed something else to dress up that sweet treat, but just don’t have it in the cupboard. From here on out- instead of throwing away those berries that are on the border of starting to become furry and completely inedible- throw them into an air tight zip-lock baggie and store them in the freezer for just this very reason. This is quick, suprisingly easy, delicious served both hot and cold, and you don’t feel bad throwing away mother nature’s delicious candies.

Prep Time: 5 minutes

Cook Time: 10 minutes


  • 1 Carton of Berries of your choice
  • 1/2 Cup Water
  • 1 Tbsp Fresh Lemon Juice
  • 1 Tsp Lemon Zest
  • 1/4 Cup Granulated Sugar
  • 1/4 Tsp Cinnamon
  • Dash of Vanilla Extract
  • Pinch of Salt


  1. Combine ingredients in small sauce pot. Place on stove and cook over high heat.
  2. Bring combination to a soft boil, turn down heat, and allow to cook until berries break down, and compote thickens but still has chunks of some whole fruit.
  3. Pour into heat safe container- serve warm- or allow to cool in refrigerator until needed.

In the event that there’s left overs, store in an airtight container and enjoy for up to 4 days.
